After a brief tease of Spring, the brisk air has returned to the Carolinas. To warm up in the midst of a brief chill, I’ve gone back to a few of my mainstay soup recipes. One of my mother’s favorite winter meals: white bean chili with cornbread. One note – the very best cornbread always comes from a cast iron skillet! While a bit heavier to pull from the oven, it’s worth the extra effort (click here for cornbread!)
My favorite way to spend a rainy Sunday afternoon – sweet potato and butternut squash soup on the stove. To complete this meal, add a brie and apple grilled cheese…trust me.
Broccoli and cheese soup – this. This is my guilty pleasure. And what makes this particular recipe amazing? It’s five minutes of preparation and four hours in a slow cooker!
