If there is one food based memory of my childhood I remember most (and oh my, there are plenty), it’s my grandfather’s adoration for tomatoes. I spent many an afternoon learning from his gardening wisdom and listening to green thumb successes from his time at the Junior Order Home.
My granddad, with all of his “brothers.” Almost daily, he reminded us that his time at the orphanage gifted him the greatest memories….
Between his childhood memories of farming and the garden he developed at his home as an adult, my grandfather seemed most at ease with pruning shears in one hand and a basket in the other. His favorite lunchtime meal, day in and day out: a sliced tomato sandwich. Using inch thick slices topped with salt and pepper, Georgie turned that simple sandwich into a five star meal (to me, at least).
As the ideal planting season approaches here in the Carolinas, I’m sharing some of our family’s favorite renditions of tomatoes. With these meals on hand, you’re sure to enjoy the delicious fruits (and veggies) of your labor!
Peter Luger Tomatoes
My grandfather’s all time favorite side dish – sliced vidalia onions and tomatoes, topped with Peter Luger sauce, olive oil, and salt and pepper. (There’s no recipe to follow here – just slice, plate, and top).
To this day, scalloped tomatoes hold a special part of my Uncle’s heart. Get a quick and easy version of this family favorite here.
