Yesterday morning, our temperatures finally dipped below 70 degrees. Rest assured, I ran as fast as I could to my Instacart app and ordered groceries for a delicious soup dinner. There is something so healing and comforting in the aromas that fill our kitchen when soup season is upon us!
One thing I love about homemade soup – the ingredients are fresh, the soup keeps for days, and the recipes tend to make plenty for lunch and dinner leftovers. (I even had enough to deliver to a neighbor last night.) Last night, I paired our butternut squash soup with dairy-free tortellini and a spinach salad. Today, I plan on enjoying the leftovers with avocado toast.
