I live a good bit of my life on the go, and recently I’ve struggled to get my nutritional balance in check. Today, I’m sharing three of my go-to breakfast options that allow me to savor delicious food without sacrificing health benefits.

Overnight chia pudding – This easy recipe allows you to make breakfast…at night! Simply take a half cup of chia seeds and add three cups of coconut or almond milk. Allow the combination to soak overnight in a sealed jar. In the morning, top with your favorite berries, a dash of honey, and enjoy! (Consider adding a tablespoon of maple syrup in the mixture for taste before refrigerating!)

Baked egg and avocado – Scrambling and sautéing egg whites takes no time at all. Even easier is this quick recipe for all of that protein combined! Preheat the oven to 425 degrees. Slice the avocado in half, and crack the egg directly in the opening where the pit has been removed. Place in a lined baking cup (use aluminum foil for minimal clean up), and bake for 15 to 20 minutes!

Coconut milk and flax seed granola – Flax seed based granola is a great choice for fiber and healthy grains without sacrificing taste. Use coconut milk or almond milk as a break from traditional dairy, and top with berries!
